I can't dine out every day....

... so it's back to naming my favorite vegan things. Today that means beets! I can't get enough of these reddish rotund roots. I put 'em in foil and bake 'em at 450 for 30 minutes to an hour and then stick 'em in the fridge. Later, I'll slice some up on a salad. Sweet and yummy. Who produces the best beets, you ask? Well, Schrute Farms of course. With Dwight Schrute running the show, it's no surprise that only the most delicious beets make it out of this place alive. I, for one, am grateful for his ground-breaking farming techniques which produce the greatest beets I've had the pleasure of eating. And, of course, they're vegan!
